You'd have to use "LevelExperienceRampOverrides" and just add a bazillion lines. Like you said though, this isn't unlimited, it would end eventually. That being said, no level cap would make very high level players/dinos REALLY op. It would also make taming high level dinos not a requirement, since you could just endlessly level dinos.

I don't have the time to explain the exact details but I'm guessing you are trying this and instead altering player levels because you might not have known.
